Tradition

The art of baking bread dates back a long way. People have always processed different varieties of grain to create valuable foods and have always understood the significance of fresh flatbreads, loaves and later, different pastry types. Bread represents indulgence, nourishes families in different cultural circles and is a symbol of life. Bread is also a tradition among the Hohenwarter family too. The bakery in Gries im Pinzgau and the branch in Bruck on the Glocknerstrasee are now in their third generation of management. The basis for this concept are the best cereal varieties, high-quality ingredients and the Austrian art of baking which have guaranteed success at the Grieserbäck for over 60 years.

The ‘Dampfl’

Production of the bread starts the evening before baking with the preparation of the ‘Dampfl’ or fermentation starter.

Preparing the dough

The fermentation starter is mixed to form the bread dough.

Rest time

The dough is then left to prove for min. 5 hours at room temperature.

Processing

Once the dough has been left to rest, it is weighed out as required and processed.

Baking

Loaves are baked in the oven for around an hour on the stone slab in the oven. High-quality starting products and the best flour are the key to a perfect result!

QUALITY

Only the best products are used at the Grieserbäck. Perfect results start with choosing original products and so we insist upon the highest quality when it comes to the ingredients for our various baked goods. We source our flour from the best suppliers and choose different cereal varieties for individual baked products. No margarine is used and instead we use high-quality butter from the region. Another big plus is the long period of resting time for the dough which ensures that our products are more easily digestible.
Each of the three generations which has headed the Grieserbäck to date has faced particular challenges. At present, these include protecting the environment, sustainability and creating top-class, healthy food for people. Challenge and inspiration at the same time!

PRODUCT CLASSICS

The range of baked goods on offer at the Grieserbäck is very varied. Different bread varieties, crunchy pastries made from different flours and sweet treats stock the shelves. Our classics can be found alongside the popular new products. Items which have been enjoyed for generations. These include our farmhouse bread, crunchy bread rolls, various pastries and – every Wednesday – fresh cream rolls.
